Inspired by the great Flanders Red ales of Belgium, this beer is brewed with a grist of pale, Munich, and dark malts to create a rich character with notes of roasted malt and dark fruit. Following primary fermentation, it is transferred to used Syrah wine barrels, where a mixed culture of wild yeast and bacteria slowly transforms the beer over many months.
Time in oak develops layers of bright acidity, red berries, cherry, plum, subtle oak, and vinous complexity, while the Syrah barrels contribute gentle tannin and depth. The result is a balanced sour ale with a dry finish and a long, evolving character.
From brew day to bottle, the entire process takes over a year.
